Recipe

Ingredients
For the meat sauce
- 1 medium zucchini, grated
- 1 medium carrot, grated
- 2 onions, chopped
- 1 tablespoon butter
- 1 teaspoon olive oil
- 3 garlic cloves, minced
- 1 kg packet lean minced beef
- 2 tablespoon meat curry powder
- 1 can lentils, drained
- 1 teaspoon dried mixed herbs
- 2 tablespoons mango chutney
- 3 tablespoon raisins
- 6 bay leaves
- Salt and pepper to taste
For the egg custard topping
- 300 ml milk
- 2 large eggs
- Salt and pepper to taste
Method
- Preheat oven to 180°C (350°F).
- Meanwhile, stir fry the onions and garlic in butter and olive oil until softened on medium heat
- Add the minced beef and stir until lightly browned.
- Add the zucchini, carrots and lentils into the mixture and stir well.
- Cover and let it simmer for 10 minutes.
- Add 1 tablespoon of water with the curry powder to make a paste.
- Add the curry paste and the rest of the ingredients into the beef mixture.
- Stir the mixture until well combined and cook until the beef mixture is thick and quite dry.
- Transfer the mixture into an ovenproof deep dish about 9” x 13”.
- Press the mixture down well and smooth the top, making a solid layered bottom.
- For the egg custard topping, beat the milk and eggs with salt and pepper and pour over the meat.
- Bake for 35 – 40 minutes until the topping is set and starting to turn golden brown.
- Serve warm with rice.
