Ingredients

Scale
  • 3 cups cooked jasmine rice (preferably day-old)
  • 1 cup cooked shredded chicken or tofu
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 2 eggs, lightly beaten
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon soy sauce
  • Salt and pepper, to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. In a small bowl, whisk together mayonnaise, sriracha, honey, and soy sauce to make the bang bang sauce; set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until just cooked. Remove eggs and set aside.
  3. Add the remaining oil to the skillet. Sauté onion and garlic until fragrant and translucent.
  4. Add bell peppers and carrots; cook for 3–4 minutes until slightly tender.
  5. Stir in the cooked chicken or tofu and heat through.
  6. Add the cooked rice, scrambled eggs, and green onions to the skillet. Toss to combine and heat evenly.
  7. Pour the prepared bang bang sauce over the rice mixture. Stir well to coat everything evenly.
  8. Season with salt and pepper to taste. Cook for another 2 minutes, stirring frequently.
  9. Remove from heat and garnish with sesame seeds if desired. Serve immediately.

Notes

For added crunch, top with chopped roasted peanuts or cashews before serving. You can also swap chicken with shrimp or keep it vegetarian using tofu.
