Beef Sausage Rolls

Ingredients
- For the Filling:
- 1/2 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, finely chopped
- 2 carrots, grated
- 1 pound ground beef
- 1 teaspoon mixed herbs
- 1 teaspoon smoked paprika
- 1 tablespoon Worcestershire sauce (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon tomato paste
- ½ cup frozen spinach, thawed, water squeezed out
- 5 button mushrooms, chopped
- 1 can kidney beans, drained
- 1 egg
- ½ cup cheddar, grated
- For the Pastry:
- 2 package puff pastry, thawed
- 1 egg, beaten
Instructions
- 1. Preheat oven to 400°F (200°C).
- 2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- 3. Add the ground beef to a large mixing bowl.
- 4. Stir in all the ingredients except cheddar cheese. Mix well.
- 5. Unroll the puff pastry on a lightly floured surface.
- 6. Spread the meat mixture evenly over 1 end of the long side of the pastry.
- 7. Roll the pastry up from the long side, like a jelly roll.
- 8. Place the sausage rolls on a baking sheet lined with parchment paper.

- 10. Bake for 25-30 minutes, or until golden brown and puffed.
