  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, browned and cooled
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 tablespoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in the cooled brown butter until mixture resembles wet sand. Press firmly into the bottom of the pan to form crust.
  3. In a large mixing bowl, beat cream cheese until smooth and creamy.
  4. Add 1 cup sugar and beat until combined.
  5. Mix in eggs one at a time, beating well after each addition.
  6. Blend in sour cream, flour, vanilla extract, and salt until smooth.
  7. Pour batter over crust in springform pan and smooth the top.
  8. Bake for 60-70 minutes or until center is almost set but still slightly jiggly.
  9. Turn off oven and leave cheesecake inside for 1 hour to cool gradually.
  10. Remove from oven and refrigerate for at least 4 hours or overnight before serving.

Notes

For best results, brown the butter slowly over medium heat until it has a nutty aroma and golden color, then cool before using. Serve chilled with a drizzle of caramel sauce or fresh berries.
