Carrot and Lentil Soup

Homemade Carrot and Lentil Soup

A wholesome and comforting carrot and lentil soup, rich in flavor and packed with nutrients, perfect for a healthy lunch or dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 large carrots, peeled and diced
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft and fragrant.
  2. Add diced carrots and cook for 5 minutes, stirring occasionally.
  3. Stir in lentils, cumin, and coriander, coating them with the vegetables and spices.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat to low and simmer for 25 minutes, or until lentils and carrots are tender.
  6. Using an immersion blender, puree the soup until smooth, or leave slightly chunky, as desired.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

For a creamier texture, add a splash of coconut milk or plain yogurt before serving.
