Cheesy Potatoes

Cheesy Potatoes are a creamy, comforting side dish featuring tender potatoes baked in a rich cheese sauce, perfect for family dinners or holiday gatherings.

  • 4 cups peeled and diced potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup butter
  • 1/4 cup chopped onions
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil diced potatoes in salted water until tender, about 10-15 minutes; drain well.
  3. In a large mixing bowl, combine butter, sour cream, milk, salt, and black pepper.
  4. Add the cooked potatoes, cheddar cheese, onions, and half of the Parmesan cheese to the bowl; mix gently to combine.
  5. Transfer the mixture into a greased baking dish and sprinkle the remaining Parmesan cheese on top.
  6. Bake uncovered for 20-25 minutes until the top is golden and bubbly.
  7. Garnish with chopped parsley before serving, if desired.

Notes

For extra crunch, sprinkle crushed cornflakes or breadcrumbs on top before baking.
