  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, diced avocado, crumbled feta, red onion, cherry tomatoes, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Adjust seasoning if needed, and serve immediately or chilled.

Notes

For extra crunch, add toasted pine nuts or serve with crusty bread on the side.
