  • 100g unsalted butter, melted
  • 300g cream cheese, softened
  • 100g granulated sugar
  • 2 large eggs
  • 100g dark chocolate, melted
  • 1 tsp vanilla extract
  • Pinch of salt
  • Whipped cream for garnish (optional)
  • Mini chocolate gnome figurines (for decoration, optional)

Instructions

  1. Preheat the oven to 160°C (320°F) and line a muffin tray with cupcake liners.
  2. Mix chocolate cookie crumbs with melted butter until combined; press firmly into the bottoms of each liner to form the crust.
  3. In a large bowl, beat the cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the melted dark chocolate, vanilla extract, and a pinch of salt until fully incorporated.
  6. Pour the cheesecake batter evenly over the crusts in the muffin liners.
  7. Bake for 20-25 minutes or until the centers are set but slightly jiggly.
  8. Remove from oven and cool to room temperature, then refrigerate for at least 3 hours to set.
  9. Before serving, garnish with whipped cream and place a mini chocolate gnome figurine on top if desired.

Notes

For an extra festive touch, drizzle melted white chocolate over the cheesecakes or add fresh berries alongside the whipped cream.
