Cinnamon Sugar Sourdough Churro Bites

Delight in these crispy, cinnamon sugar-coated sourdough churro bites that make a perfect sweet snack or dessert with a tangy twist from sourdough.

  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1 cup water
  • 2 tablespoons unsalted butter
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. In a medium saucepan, combine water, butter, 1 tablespoon sugar, and salt; bring to a boil over medium heat.
  2. Remove from heat and stir in flour quickly until the mixture forms a smooth ball.
  3. Transfer the dough to a mixing bowl and let it cool for 5 minutes.
  4. Beat in eggs one at a time, mixing well after each addition, then add sourdough discard and vanilla extract until incorporated.
  5. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
  6. Pipe the dough into 1-inch bite-sized pieces directly into the hot oil using a pastry bag fitted with a star tip.
  7. Fry the bites in batches until golden brown and crispy, about 2-3 minutes per batch.
  8. Remove churro bites with a slotted spoon and drain on paper towels.
  9. Mix cinnamon and sugar in a bowl, then toss warm churro bites in the cinnamon sugar to coat evenly.
  10. Serve warm and enjoy!
