Coconut Almond Chocolate Pudding

A rich and creamy coconut almond chocolate pudding that’s naturally sweetened and perfect for a healthy dessert or snack.

  • 1 can (14 oz) full-fat coconut milk
  • 1/4 cup almond butter
  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons maple syrup
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Toasted sliced almonds (for garnish)

Instructions

  1. In a blender, combine the coconut milk, almond butter, cocoa powder, maple syrup, chia seeds, vanilla extract, and sea salt.
  2. Blend on high until smooth and creamy.
  3. Pour the mixture into serving jars or bowls.
  4. Refrigerate for at least 4 hours or overnight to let it thicken.
  5. Before serving, stir gently and garnish with toasted sliced almonds.

Notes

For extra richness, add a tablespoon of melted dark chocolate or serve with fresh berries on top.
