Cowboy Queso Dip is a creamy, flavorful cheese dip loaded with spicy chorizo, green chilies, and zesty seasonings—perfect for game day or casual gatherings.

  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 oz cooked chorizo sausage, crumbled
  • 1 cup diced green chilies (mild or hot)
  • 1/2 cup diced tomatoes, drained
  • 1/4 cup chopped green onions
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/4 tsp smoked paprika
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. In a medium skillet, cook the chorizo over medium heat until fully browned. Drain excess grease and set aside.
  2. In a medium saucepan over low heat, combine cream cheese, cheddar, and Monterey Jack cheeses. Stir frequently until the cheeses are fully melted and smooth.
  3. Add the cooked chorizo, diced green chilies, diced tomatoes, green onions, cumin, garlic powder, chili powder, smoked paprika, salt, and pepper to the melted cheese mixture. Stir well to combine and heat through for about 5 minutes.
  4. Transfer the queso dip to a serving bowl and garnish with chopped fresh cilantro if desired.
  5. Serve warm with tortilla chips, sliced jalapeños, or fresh veggies for dipping.

Notes

For an extra kick, add a splash of your favorite hot sauce or substitute chorizo with spicy ground beef. This dip also pairs wonderfully with crunchy pretzel chips.
