  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange
  • 2 tablespoons fresh orange juice
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, orange zest, and orange juice until well combined.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in dried cranberries and chopped walnuts if using.
  7. Drop tablespoon-sized dough balls onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra zest, drizzle with a simple orange glaze made from powdered sugar and fresh orange juice once cooled.
