  • 3 cups all-purpose flour
  • 1 cup warm water (110°F/45°C)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 3/4 cup chopped walnuts
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, dissolve sugar and active dry yeast in warm water. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour, salt, and cinnamon.
  3. Pour the yeast mixture and olive oil into the dry ingredients. Stir until a shaggy dough forms.
  4. Fold in dried cranberries, raisins, and chopped walnuts evenly into the dough.
  5. Turn dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  6. Place dough in a lightly oiled bowl, cover with a towel, and let it rise in a warm spot for 1 to 1.5 hours until doubled in size.
  7. Preheat oven to 450°F (230°C). Place a Dutch oven or heavy oven-safe pot inside to heat.
  8. Shape the risen dough into a round loaf on a piece of parchment paper.
  9. Carefully remove the hot pot from the oven, transfer the dough with parchment paper into the pot, cover with lid, and bake for 30 minutes.
  10. Remove the lid and bake for an additional 10-15 minutes until the crust is deep golden brown.
  11. Let the bread cool completely on a wire rack before slicing.

For an extra touch of sweetness, brush the top with honey while the bread is still warm or serve toasted with cream cheese.
