Creamy Miso Butter Beans is a rich and flavorful dish combining silky butter beans with umami-packed miso, perfect as a comforting side or light main.

  • 2 cups cooked butter beans (fresh or canned)
  • 2 tablespoons white miso paste
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 1 small garlic clove, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh chives or parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add the butter and let it melt completely.
  3. Stir in the cooked butter beans and gently mash a few beans with the back of a spoon for a creamy texture.
  4. Lower the heat and whisk in the white miso paste until fully combined.
  5. Pour in the heavy cream and stir gently, cooking for 3-4 minutes until the mixture is heated through and creamy.
  6. Season with salt and freshly ground black pepper to taste.
  7. Remove from heat and garnish with chopped chives or parsley before serving.

Notes

For added depth, try topping with toasted breadcrumbs or a drizzle of toasted sesame oil before serving.
