Creamy Tuscan Chicken is a rich and flavorful Italian-inspired dish featuring tender chicken breasts cooked in a savory garlic cream sauce with sun-dried tomatoes, spinach, and herbs.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat and cook chicken until golden and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant.
  4. Add sun-dried tomatoes and cook for 2 minutes.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the pan.
  6. Reduce heat and stir in heavy cream and Parmesan cheese until the sauce thickens.
  7. Add fresh spinach and cook until wilted.
  8. Return chicken to the skillet and spoon sauce over the top. Simmer for 2-3 minutes to combine flavors.
  9. Serve hot, garnished with extra Parmesan if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half and use reduced-fat Parmesan. Serve over pasta, rice, or with crusty bread to soak up the delicious sauce.
