Crispy Almond Cookies

Delight in these crispy almond cookies, featuring a perfect balance of crunch and rich almond flavor, ideal for a light snack or dessert.

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sliced almonds

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together all-purpose flour, almond flour, baking powder, and salt.
  3. In a separate large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the sliced almonds gently.
  7. Drop tablespoon-sized dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Flatten each cookie slightly with the back of a spoon or your fingers.
  9. Bake for 12–15 minutes or until the edges are golden brown and cookies are crispy.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a pinch of sea salt on top of the cookies before baking or dip half in melted dark chocolate once cooled.
