Butternut Squash

A simple and wholesome roasted butternut squash dish that highlights its natural sweetness and creamy texture, perfect as a comforting side or a nutritious main.

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh rosemary, chopped (optional)
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the peeled and cubed butternut squash in a large bowl.
  3. Drizzle olive oil over the squash cubes, then sprinkle salt, pepper, garlic powder, and rosemary if using.
  4. Toss well to evenly coat all pieces.
  5. Spread the squash cubes on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, or until tender and lightly caramelized, stirring halfway through.
  7. Remove from the oven and serve warm.

Notes

For a sweeter twist, drizzle a little maple syrup over the squash before roasting or add a sprinkle of cinnamon for a cozy flavor.
