Hearty and flavorful lentil burgers packed with protein and fiber, perfect as a nutritious vegetarian alternative to traditional burgers.

Ingredients

  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup grated carrot
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 egg (or flax egg for vegan option)
  • 2 tablespoons olive oil for frying
  • Burger buns and toppings of choice (lettuce, tomato, avocado, etc.)

Instructions

  1. In a large bowl, mash the cooked lentils until mostly smooth but with some texture remaining.
  2. Add the breadcrumbs, chopped onion, minced garlic, grated carrot, parsley, soy sauce, smoked paprika, ground cumin, salt, and pepper.
  3. Mix in the egg until the mixture holds together well; if too wet, add more breadcrumbs.
  4. Shape the mixture into 4 evenly sized patties.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook the patties for about 4-5 minutes on each side or until golden brown and heated through.
  7. Serve warm on burger buns with your favorite toppings.

Notes

For a crispier exterior, finish cooking the burgers in a preheated oven at 375°F (190°C) for 5 minutes after pan-frying.
