  • 6 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 8 cups beef broth (or vegetable broth for a vegetarian option)
  • 1/2 cup dry white wine (optional)
  • 1 bay leaf
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and freshly ground black pepper, to taste
  • Baguette slices, toasted
  • 2 cups grated Gruyère cheese

Instructions

  1. In a large Dutch oven, melt butter with olive oil over medium heat.
  2. Add the sliced onions, salt, and sugar, stirring occasionally, cook for about 45 minutes until onions are deeply caramelized and golden brown.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Sprinkle flour over the onions, stir, and cook for 2-3 minutes to remove raw flour taste.
  5. Slowly pour in the beef broth and white wine while stirring, scraping any browned bits from the bottom.
  6. Add bay leaf and thyme, bring soup to a boil, then reduce heat and simmer uncovered for 30 minutes.
  7. Remove bay leaf, season with salt and pepper to taste.
  8. Preheat your oven’s broiler.
  9. Ladle soup into oven-safe bowls, place toasted baguette slices on top, and sprinkle generously with Gruyère cheese.
  10. Place bowls on a baking sheet and broil until cheese is bubbly and golden brown, about 2-4 minutes.
  11. Serve hot and enjoy your comforting Dutch oven French onion soup.
