Filipino Chicken Adobo

Filipino Chicken Adobo is a savory and tangy stew featuring tender chicken simmered in a flavorful blend of soy sauce, vinegar, garlic, and spices. This classic Filipino dish offers a perfect balance of salty, sour, and slightly sweet flavors.

  • 2 lbs chicken thighs, bone-in and skin-on
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1 cup water
  • 6 cloves garlic, crushed
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 1 tbsp cooking oil
  • 1 tbsp brown sugar (optional)
  • Salt to taste

Instructions

  1. In a large bowl, combine chicken, soy sauce, and crushed garlic. Marinate for at least 30 minutes.
  2. Heat oil in a large skillet over medium heat. Brown the chicken pieces on all sides, about 5 minutes.
  3. Add the marinade, vinegar, water, bay leaves, peppercorns, and brown sugar to the skillet. Do not stir once vinegar is added.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for 30-40 minutes or until chicken is tender and sauce has reduced.
  5. Adjust seasoning with salt as needed. Remove bay leaves before serving.
  6. Serve hot with steamed white rice.

Notes

For a richer flavor, let the chicken marinate overnight. You can also add hard-boiled eggs or potatoes to the stew for variety.
