Flourless Yogurt Cake

A moist and tangy flourless yogurt cake that is naturally gluten-free and easy to prepare, perfect for a wholesome dessert or snack.

  • 2 cups Greek yogurt
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 2 teaspoons baking powder
  • ½ cup almond meal
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch springform pan.
  2. In a large bowl, whisk together the Greek yogurt and sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon zest and vanilla extract.
  5. In a separate bowl, combine almond meal, baking powder, and salt.
  6. Fold the dry ingredients into the wet mixture gently until fully incorporated.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 40 to 45 minutes, or until the cake is set and a toothpick comes out clean.
  9. Allow to cool completely before removing from the pan.
  10. Serve plain or dusted with powdered sugar, optionally topped with fresh berries.

Notes

For added flavor, try incorporating orange zest instead of lemon, or serve with a drizzle of honey and fresh fruit for a delightful twist.
