Fluffy Marshmallows

Delight in these homemade fluffy marshmallows that are soft, airy, and perfect for snacking or adding to your favorite hot beverages.

Ingredients

  • 3 envelopes unflavored gelatin (about 2 1/2 tablespoons)
  • 1 cup cold water, divided
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 tablespoon pure vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Place gelatin into the bowl of a stand mixer along with 1/2 cup cold water to soften.
  2. In a saucepan, combine granulated sugar, corn syrup, salt, and remaining 1/2 cup water.
  3. Cook over medium heat, stirring until sugar dissolves, then bring to a boil without stirring until mixture reaches 240°F (soft ball stage).
  4. With mixer on low speed, slowly pour hot syrup into the gelatin mixture.
  5. Increase mixer speed to high and beat until mixture is very thick, white, and tripled in volume (about 10-15 minutes).
  6. Add vanilla extract and mix briefly to combine.
  7. Pour mixture into a greased and powdered sugar–dusted pan, smoothing the top.
  8. Allow marshmallows to set uncovered at room temperature for at least 4 hours or overnight.
  9. Dust top with powdered sugar, remove from pan, and cut into desired shapes.

Notes

For an extra twist, lightly toast marshmallows over a flame before serving or incorporate different flavor extracts to customize.
