  • 1 cup heavy cream
  • 4 oz bittersweet chocolate, chopped
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (160°C). Prepare a water bath by placing a large baking dish with about 1 inch of water in the oven.
  2. Heat the milk and cream in a saucepan over medium heat until it just starts to simmer. Remove from heat.
  3. Add the chopped chocolate to the hot milk mixture and stir until fully melted and smooth.
  4. In a mixing bowl, whisk together eggs, sugar, vanilla extract, and salt until combined but not frothy.
  5. Gradually pour the chocolate milk mixture into the eggs while whisking gently to temper the eggs.
  6. Strain the custard through a fine sieve into a flan dish or individual ramekins.
  7. Place the flan dish or ramekins into the water bath in the oven. Bake for 40-45 minutes, or until the custard is set but still slightly jiggly in the center.
  8. Remove from the oven and let cool at room temperature, then refrigerate for at least 3 hours before serving.
  9. Serve chilled, optionally topped with whipped cream or fresh berries.

For an extra indulgent touch, serve with a sprinkle of sea salt or a drizzle of caramel sauce to enhance the chocolate flavor.
