Garlic Butter Beef Bites with Creamy Mashed Potatoes

  • 1 lb beef sirloin, cut into bite-sized pieces
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 lb russet potatoes, peeled and cubed
  • 1/2 cup whole milk
  • 1/4 cup sour cream
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Place potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15 minutes; drain well.
  2. While potatoes cook, heat olive oil in a skillet over medium-high heat. Add beef bites and sear until browned on all sides, about 4-6 minutes. Remove beef from skillet and set aside.
  3. Reduce heat to medium and add 2 tablespoons butter and minced garlic to the skillet. Cook until fragrant, about 1 minute.
  4. Return beef bites to the skillet and toss to coat with garlic butter. Remove from heat.
  5. In a large bowl, mash the cooked potatoes with milk, sour cream, and remaining 2 tablespoons butter until smooth and creamy. Season with salt and pepper to taste.
  6. Plate the creamy mashed potatoes and top with garlic butter beef bites. Garnish with chopped parsley and serve immediately.

Notes

For an extra layer of flavor, sprinkle parmesan cheese over the mashed potatoes before serving or add a splash of white wine to the garlic butter sauce.
