  • 6 bone-in, skin-on chicken thighs
  • 4 tablespoons unsalted butter
  • 5 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry and season generously with salt, pepper, paprika, and dried thyme.
  2. Heat 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Place the chicken thighs skin-side down and cook until the skin is golden and crispy, about 7-9 minutes. Flip and cook the other side for 5 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. Reduce heat to medium and add remaining 2 tablespoons of butter to the skillet.
  6. Add minced garlic and sauté until fragrant, about 1 minute.
  7. Pour in chicken broth, scraping up any browned bits from the bottom.
  8. Return chicken to the skillet, spooning the sauce over the thighs.
  9. Cover and simmer for an additional 10 minutes, or until chicken is cooked through (internal temperature of 165°F / 74°C).
  10. Sprinkle with fresh parsley before serving.

Notes

For a complete meal, serve with steamed vegetables or over creamy mashed potatoes to soak up the delicious garlic butter sauce.
