Ground Turkey Stuffed Peppers

These Ground Turkey Stuffed Peppers are a healthy and flavorful meal, combining lean turkey with vegetables and spices baked to perfection inside bell peppers.

  • 4 large bell peppers (any color)
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
  3. Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 3 minutes.
  4. Add garlic and cook for another minute until fragrant.
  5. Add ground turkey to the skillet, breaking it apart, and cook until browned and cooked through.
  6. Stir in cooked rice, diced tomatoes, oregano, cumin, salt, and pepper. Cook for 2-3 minutes, stirring to combine.
  7. Remove skillet from heat and spoon the turkey mixture evenly into each bell pepper.
  8. Place stuffed peppers upright in a baking dish and cover with foil.
  9. Bake for 25 minutes. Remove foil, sprinkle mozzarella cheese on top, and bake uncovered for an additional 10 minutes until cheese is melted and bubbly.
  10. Garnish with fresh parsley if desired and serve warm.

Notes

For extra flavor, try adding a dash of smoked paprika or a splash of hot sauce to the turkey mixture before stuffing.
