A fresh and healthy veggie wrap packed with crisp vegetables and a flavorful spread, perfect for a quick lunch or light dinner.

Ingredients

  • 1 large whole wheat tortilla
  • 2 tablespoons hummus
  • 1/4 cup shredded carrots
  • 1/4 cup sliced cucumber
  • 1/4 cup diced tomatoes
  • 1/4 cup mixed greens
  • 2 tablespoons thinly sliced red onion
  • 1/4 avocado, sliced
  • Salt and pepper, to taste
  • 1 teaspoon lemon juice

Instructions

  1. Lay the tortilla flat on a clean surface.
  2. Spread the hummus evenly over the tortilla.
  3. Layer the shredded carrots, cucumber, tomatoes, mixed greens, red onion, and avocado slices on top.
  4. Drizzle with lemon juice and season with salt and pepper to taste.
  5. Carefully roll up the tortilla tightly, folding in the sides to enclose the filling.
  6. Slice the wrap in half diagonally and serve immediately.

Notes

For extra protein, add grilled tofu or chickpeas. Serve with a side of your favorite dipping sauce or a fresh fruit salad.
