Homemade Green Bean Casserole

A classic and comforting homemade green bean casserole featuring fresh green beans, creamy mushroom sauce, and crispy fried onions for a deliciously satisfying side dish.

  • 1 lb fresh green beans, trimmed and cut in half
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tsp soy sauce
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 1/2 cups crispy fried onions

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blanch green beans in boiling salted water for 4-5 minutes until tender-crisp. Drain and set aside.
  3. In a large skillet, melt butter over medium heat. Add mushrooms, onion, and garlic; sauté until onions are translucent and mushrooms are tender, about 5-7 minutes.
  4. Sprinkle flour over the vegetables and cook for 1-2 minutes, stirring constantly to avoid lumps.
  5. Gradually whisk in broth and heavy cream. Bring to a simmer and cook until sauce thickens, about 3-5 minutes.
  6. Stir in soy sauce, salt, pepper, and half of the crispy fried onions.
  7. Combine sauce with blanched green beans and transfer the mixture to a baking dish.
  8. Bake uncovered for 20-25 minutes until bubbly.
  9. Top casserole with remaining crispy fried onions and bake an additional 5 minutes until golden brown.
  10. Remove from oven and let cool slightly before serving.

Notes

For a vegetarian version, use vegetable broth and ensure the fried onions are free from animal products. You can also add shredded cheddar cheese on top before the final baking for extra richness.
