  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 2 tablespoons honey
  • 1/2 cup ricotta cheese
  • 1/4 cup orange juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine cranberries, honey, orange juice, garlic, thyme, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat and sear chicken breasts for 2–3 minutes per side until golden.
  4. Place seared chicken in a baking dish and pour the cranberry mixture over the top.
  5. Bake uncovered for 20 minutes.
  6. Remove from oven and dollop ricotta cheese evenly over each breast.
  7. Sprinkle chopped walnuts if desired, then return to oven and bake for an additional 5–7 minutes until the chicken is cooked through and ricotta is slightly warmed.
  8. Serve warm, spooning sauce over the chicken.

Notes

For extra flavor, garnish with fresh thyme leaves or a sprinkle of freshly grated Parmesan before serving.
