This Low Carb Chicken Casserole is a delicious, healthy dish combining tender chicken, fresh vegetables, and creamy cheese, perfect for a satisfying meal without the carbs.

  • 3 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup cauliflower, steamed and chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, steamed broccoli, and cauliflower.
  3. In a separate bowl, mix sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper.
  4. Add the creamy mixture to the chicken and vegetables; stir well to combine.
  5. Transfer the mixture into a greased casserole dish and spread evenly.
  6. Top with shredded cheddar and grated Parmesan cheese.
  7. Drizzle olive oil over the cheese layer.
  8. Bake uncovered for 25-30 minutes until the cheese is bubbly and golden.
  9. Remove from oven and let it rest for 5 minutes before serving.

Notes
