This Maple Dijon Roasted Apples Carrots dish combines sweet apples and tender carrots roasted to perfection with a tangy maple-dijon glaze, making a perfect side for any meal.

  • 4 large carrots, peeled and sliced
  • 2 medium apples, cored and sliced
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper.
  3. Add the sliced carrots and apples to the bowl and toss until evenly coated with the maple-Dijon mixture.
  4. Spread the coated carrots and apples in a single layer on a baking sheet lined with parchment paper.
  5. Sprinkle fresh thyme leaves over the top if using.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through until the carrots are tender and caramelized.
  7. Remove from oven and serve warm as a delicious side dish.

Notes

For added depth, sprinkle chopped toasted pecans on top just before serving.
