A vibrant and fresh Mediterranean salad combining juicy cherry tomatoes and briny olives, perfect as a light snack or side dish.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. In a mixing bowl, combine the halved cherry tomatoes and sliced Kalamata olives.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  3. Pour the dressing over the tomato and olive mixture and toss gently to combine.
  4. Let the salad sit for 10 minutes to allow flavors to meld.
  5. Garnish with fresh basil leaves before serving.

Notes

For an extra burst of flavor, add crumbled feta cheese or a sprinkle of toasted pine nuts.
