Ingredients

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/4 cup mini dark chocolate chips
  • 2 tbsp chia seeds
  • 2 tbsp honey or maple syrup
  • 1/4 cup natural almond butter
  • 1/2 tsp peppermint extract
  • 2 tbsp flaxseed meal
  • 2-3 tbsp almond milk (as needed)

Instructions

  1. In a large bowl, combine rolled oats, protein powder, chia seeds, flaxseed meal, and mini dark chocolate chips.
  2. Add almond butter, honey (or maple syrup), and peppermint extract to the dry ingredients.
  3. Mix well, adding almond milk one tablespoon at a time until the mixture is sticky but holds together.
  4. Roll the mixture into 1-inch balls and place on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up before serving.
  6. Store in an airtight container in the refrigerator for up to one week.

Notes

For an extra refreshing twist, roll the finished protein balls in finely chopped fresh mint or shredded coconut before chilling.
