One-Pan Chicken Dinner with Buttered Noodles

This easy one-pan chicken dinner features tender chicken breasts cooked alongside buttered noodles, creating a comforting and flavorful meal perfect for busy weeknights.

  • 2 boneless, skinless chicken breasts
  • 8 oz egg noodles
  • 3 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and dried thyme.
  2. Add chicken to the skillet and cook for about 5-7 minutes on each side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  4. Pour in chicken broth and bring to a simmer.
  5. Add egg noodles to the skillet, stirring to submerge them in the broth.
  6. Cover and cook for 8-10 minutes until noodles are tender and most of the liquid is absorbed.
  7. Stir in butter until melted and noodles are glossy.
  8. Return chicken breasts to the skillet to warm through for 2 minutes.
  9. Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, sprinkle grated Parmesan cheese over the noodles before serving or add steamed vegetables for a more balanced meal.
