A quick and flavorful one-pot meal featuring lean ground turkey and tender orzo pasta cooked together in a savory tomato sauce, perfect for a nutritious weeknight dinner.

  • 1 lb ground turkey
  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and cook until softened, about 3 minutes.
  2. Add minced garlic and cook for another 1 minute until fragrant.
  3. Add ground turkey to the pot, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Season with salt, pepper, oregano, and basil.
  4. Stir in the orzo pasta and diced tomatoes (with juices), mixing to combine.
  5. Pour in chicken broth and bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 10-12 minutes or until orzo is tender and liquid is mostly absorbed. Stir occasionally to prevent sticking.
  7. Remove from heat and stir in grated Parmesan cheese if using.
  8. Garnish with fresh parsley and serve warm.

Notes

For added flavor, top with a squeeze of fresh lemon juice or serve with a side of steamed vegetables.
