  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  3. In the same skillet, add garlic, ginger, and red bell pepper; sauté for 2-3 minutes until fragrant and slightly softened.
  4. Stir in pineapple chunks and cook for another 2 minutes.
  5. In a small bowl, whisk together soy sauce, honey, rice vinegar, and cornstarch mixture.
  6. Pour the sauce into the skillet and cook, stirring constantly, until it thickens, about 2 minutes.
  7. Return the chicken to the skillet and toss to coat evenly in the sauce.
  8. Sprinkle with sliced green onions and red pepper flakes if using. Serve hot over rice or noodles.
