  • 1 medium butternut squash, peeled and cubed
  • 1 lb ground turkey
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cubed butternut squash with 1 tbsp olive oil, salt, and pepper, then spread on a baking sheet.
  3. Roast the squash for 25-30 minutes, turning halfway through, until tender and caramelized.
  4. While the squash roasts, heat remaining olive oil in a skillet over medium heat.
  5. Add diced onion and cook until translucent, about 3-4 minutes.
  6. Add minced garlic, smoked paprika, and cumin, cooking for 1 more minute until fragrant.
  7. Add ground turkey, breaking it up with a spoon, and cook until browned and cooked through, about 7-8 minutes. Season with salt and pepper.
  8. Once squash is roasted, combine it with the cooked ground turkey in the skillet and stir to mix well.
  9. Serve warm, garnished with chopped fresh parsley if desired.

For extra flavor, try adding a splash of balsamic vinegar or a sprinkle of feta cheese before serving.
