  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the sourdough discard and apple cider. Let it sit for 5 minutes to activate.
  3. In a large bowl, combine the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In another bowl, beat the eggs, then add the oil and vanilla extract. Mix well.
  5. Pour the wet ingredients into the sourdough and cider mixture; stir to combine.
  6. Slowly add the wet mixture to the dry ingredients, stirring gently until just combined. Avoid overmixing.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For an extra touch, serve slices toasted with a spread of cinnamon butter or cream cheese. You can also add chopped nuts or raisins to the batter for added texture.
