Spiced Pumpkin Bread with Toasted Nuts

  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 1/2 cup toasted chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, sugars, baking soda, salt, and spices.
  3. In another bowl, beat together vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Fold in the toasted nuts gently.
  6. Pour batter into the prepared loaf pan, spreading evenly.
  7. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor, try adding a sprinkle of cinnamon sugar on top before baking or serving slices with cream cheese spread.
