Spinach Garlic Meatballs

Delicious and nutritious spinach garlic meatballs that combine fresh greens with savory flavors, perfect for a wholesome dinner or snack.

  • 1 lb ground beef
  • 1 cup fresh spinach, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, onion, oregano, salt, and pepper.
  2. Mix ingredients gently until well combined, being careful not to overwork the mixture.
  3. Shape the mixture into 1-inch meatballs and set aside.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add the meatballs and cook for about 10 minutes, turning occasionally to brown all sides and cook through.
  6. Once cooked, remove meatballs from skillet and serve hot.

Notes

For added flavor, serve the meatballs with a side of marinara sauce or toss them in your favorite pasta.
