Strawberry Sugar Cookies

Delight in these soft and chewy strawberry sugar cookies bursting with fresh strawberry flavor and a sprinkle of sugar for the perfect sweet treat.

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup fresh strawberries, finely chopped
  • 2 tablespoons sugar for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a separate large bowl, cream together softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gently fold in the chopped fresh strawberries.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Roll dough into 1-inch balls, then roll each ball in sugar to coat.
  8. Place the coated dough balls 2 inches apart on the prepared baking sheets.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra burst of flavor, drizzle melted white chocolate over the cooled cookies before serving.
