Superbowl Food Nourish Bowl

A vibrant and wholesome nourish bowl packed with fresh vegetables, protein, and a zesty dressing, perfect for a healthy Superbowl feast.

  • 1 cup cooked quinoa
  • 1 cup grilled chicken breast, sliced
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1 cup fresh spinach leaves
  • 2 tbsp chopped fresh cilantro
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, black beans, corn, cherry tomatoes, red onion, spinach, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper to make the dressing.
  3. Pour the dressing over the quinoa mixture and toss gently to combine.
  4. Top the bowl with grilled chicken slices and diced avocado.
  5. Serve immediately or chill for 30 minutes for flavors to meld.

Notes

For extra heat, add a pinch of cayenne pepper to the dressing or serve with sliced jalapeños.
