Ingredients
- 6 large green apples, large
- 1 ¾ cups (420 ml) heavy cream
- ½ cup butter
- 2 cups brown sugar
- 1 cup corn syrup
- 1 teaspoon vanilla essence
- ½ teaspoon salt
- Toppings for apple like brown sugared peanuts
- 6 wooden craft sticks
Method
- Clean the wax off the apples and dry properly so that the caramel can stick to the apples.
- Take the stem off the apple and insert the wooden stick into the middle of the apple.
- Keep the apples in the fridge until time to coat with caramel.
- Add heavy cream, butter, brown sugar, corn syrup and salt in a large pot.
- Heat the mixture over medium heat and let it boil while stirring constantly.
- Attach a candy thermometer and make sure the temperature of the caramel reaches 113 – 116°C (235 – 240°F).
- Remove the caramel from the heat and transfer to a heat-proof bowl.
- Allow the caramel to cool to 97°C (200°F) before dipping the apples into the caramel.
- Gently swirl to coat all sides of the apple and allow the excess caramel to drip off. You can scrape off excessive caramel at the bottom of the apple.
- You can coat the caramel apple with your favorite toppings while the caramel is still warm.
- Let the caramel apple harden in the fridge on a parchment paper.
