Deliciously roasted sweet potato rounds topped with a sweet and salty honey feta crumble, perfect as a flavorful appetizer or snack.

Ingredients

  • 2 medium sweet potatoes, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 100g feta cheese, crumbled
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves (optional)
  • 1 tablespoon chopped walnuts (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato rounds with olive oil, salt, and black pepper.
  3. Arrange the sweet potato slices in a single layer on the baking sheet.
  4. Bake for 20-25 minutes, flipping halfway, until tender and lightly browned.
  5. While the sweet potatoes bake, crumble the feta cheese into a small bowl and mix with honey.
  6. Once the sweet potatoes are done, remove from oven and let cool slightly.
  7. Top each sweet potato round with a spoonful of the honey feta mixture.
  8. Garnish with fresh thyme leaves and chopped walnuts if desired.
  9. Serve warm or at room temperature as a delicious appetizer or snack.

Notes

For extra crunch and flavor, sprinkle with toasted pine nuts or add a drizzle of balsamic glaze before serving.
