This comforting Tomato Basil Noodle Soup features a fragrant blend of fresh tomatoes, basil, and tender noodles, perfect for a cozy meal any day.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups diced tomatoes (fresh or canned)
  • 4 cups vegetable broth
  • 1 cup egg noodles
  • 1/4 cup fresh basil leaves, chopped
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon sugar (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for another 1 minute until fragrant.
  3. Pour in diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add egg noodles and cook according to package instructions until tender, about 7-8 minutes.
  5. Stir in fresh basil leaves, and season with salt, pepper, and sugar if desired.
  6. Remove from heat and serve hot, garnished with extra basil if preferred.

Notes

For extra richness, add a splash of cream or a sprinkle of grated Parmesan cheese before serving.
