  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 5 cups fresh kale, stems removed and chopped
  • 1 (9-ounce) package cheese tortellini
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes.
  2. Add the diced onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Pour in the chicken broth and diced tomatoes with their juices. Stir in the oregano, crushed red pepper flakes (if using), salt, and pepper. Bring the soup to a boil.
  4. Reduce heat to simmer and cook for 10 minutes to allow flavors to meld.
  5. Add the chopped kale and tortellini to the pot. Cook until the tortellini are tender, about 5-7 minutes.
  6. Adjust seasoning with additional salt and pepper if needed. Ladle soup into bowls and garnish with grated Parmesan cheese before serving.

Notes

For an extra layer of flavor, garnish with fresh basil or a squeeze of lemon juice. This soup pairs wonderfully with crusty bread.
